Following the frost of 1929, the Leccio del Corno cultivar was discovered in San Casciano in Val di Pesa and renowned for its remarkable resilience against the cold. Tenuta Maryamado stands out as one of the very few producers of this exceptionally hardy monocultivar.

This extra virgin olive oil boasts a bold flavour profile and robust structure, making it perfect for enhancing dishes like carpaccio, salads, and enjoying on its own.

Sensory Evaluation

Medium to intense green olive fruitiness. A distinctive artichoke note on both the nose and the palate, with hints of almond. Medium to intense bitterness and pungency. A well-balanced, classic Tuscan profile.

Harvest

Manual harvesting took place between October and early November 2025, during the initial stages of ripening, in order to maximize both aromatic and phenolic content.

Milling

We employ a continuous cold extraction process at our mill, using equipment to reduce oxidative impact. Olives are processed within a few hours of harvesting and the oil is immediately filtered.

Storage

Storage occurs naturally under inert gas (Argon) within stainless steel silos, maintained in a temperature-controlled environment of 18°C.
