Originally employed solely as a pollinator to boost the fertility of other plants, an early harvest and processing–conducted a few weeks ahead of schedule–unveiled an exceptionally flavourful extra virgin olive oil abundant in polyphenols.

Perfect for enjoying directly from the bottle, it pairs splendidly with salads, adding a touch of intensity and flavour.

Sensory Evaluation

Medium-intensity green olive fruitiness. Medium bitterness and medium to intense pungency, with notes of thistle and chicory. Highly astringent, resulting in a slightly less balanced profile.

Harvest

Manual harvesting took place between October and early November 2025, during the initial stages of ripening, in order to maximize both aromatic and phenolic content.

Milling

At our company's mill, we employ a continuous cold extraction process, using equipment with reduced oxidative impact. Olives are processed within a few hours of harvesting and immediately undergo filtration.

Storage

Storage occurs naturally under inert gas (Argon) within stainless steel silos, maintained in a temperature-controlled environment of 18°C.
